I Wish I could spend all my days like that, with my feet in the sand, reading and enjoying the soft touch of the sun on my face.

It s been a while since I wrote on my blog as we have been travelling so much since we landed in Europe !

Also I really felt I needed a break as it had become quite overwhelming lately all that cooking and Instagram activity.

Almost an addiction πŸ˜…

So Γ  little detox for me this summer, enjoying beautiful sceneries, great French food, new healthy spots, drinking coffee ….and posting a little about my discoveries.

Mouthwatering Shortbreads !

The Holidays have officially started ! And Rose and Leopold are so excited to go back to France !!! I had to figure out something to do this morning to use all their energy and turn it into a fun family activity… So we baked shortbreads. The real British ones, so buttery, they crumble between your fingers.

I have tried some plant based alternatives a few times, but not so satisfying. So I stick to the original recipe, whichΒ I don’t do so often as we are more on balanced healthy cooking usually πŸ™‚

But they love them so much, that once in a while it is pure pleasure to see them eat them until the last crumb !

Asparagus, avocado, soba noodle salad

I love green colour ! from clothing to food, anything green will do !

I guess unconsciously it is the link with nature, the vibrant plant Β energy and the freshness it inspires that attracts me.

Also, when I have been a little overindulgent over the week end πŸ™‚ I need to go for green food !

So today, I say yes to an all green veggies lunch salad.

I chose wholewheat soba noodles as I had been running 9 km this morning and needed some good carbs to pair with my veggies.

Zucchini and lemon spelt pizza

The first time I tried pasta with white lemon sauce in Italy, I was very curious about the flavor and wondered whether I’d like it.

Since then I am in love with the combination of lemon and mediterranean herbs and veggies with either pasta or pizza.

Today I made a pizza as we hadn’t had some for quite sometimes and kids love it. Also it is a good way to have them eat veggies they don’t like so much, like zucchinis πŸ™‚

I chose to make a new dough recipe, using spelt flour which I find nice with a nutty wholemeal flavor.

This version is vegetarian as I used parmesan cheese but you can chose vegan parmesan and plant based yogurt or cashew white sauce to make this recipe vegan.

Superseeded bliss balls

A little tired today and feeling I need to fix my sugar cravings with healthy snacks. Bliss balls are my go to treat in that case. Energy packed and sweet, they are so satisfying…

I opted to make this variation which is date free and full of various seeds to maximise good nutritious elements from seeds and nut butter vs carb from dates.

Vegan apricot clafoutis

We don’t have seasons in Singapore, but I can feel it is summer ! My mums keeps on sending beautiful pictures of her garden flowers and veggies, and Instagram is packed with incredible summer fruit pictures !

So today, I want to bake a really summery dessert: a clafoutis. If you have never tried it, imagine a baked custard texture with soft center and crispy caramelized top. You can use any fruits, but usually people will bake cherry clafoutis. I love it !! However today I opted for apricots as I managed to find some cute ones in the store next to my place πŸ™‚

Trust me it is really delightful, and this vegan option is much lighter than the regular ones.

Parsley walnut vegan pesto

I have always loved pesto. But I can still not figure out why I used to buy it !

It is so easy to make and so much healthier. In this one, only 5 ingredients and mostly herbs and nuts.. !

Also, since I have found out about vegan pesto, I rarely make the cheese version and use nuts and nutritional yeast to create great vibrant green spreads to eat on my toasts, rice or pasta.

If you have 5 min, a bunch of parsley and some nuts in your fridge you can make this one now !

Sunny Buddha bowl

Buddha bowls are the easiest meals.

Providing you have a few grains and veggies already cooked, a good spread like houmous or pesto, some raw veggies, herbs and seeds, you can compose a Buddha bowl in 5 min !

Today, I had no time to cook, and my fridge was packed with leftovers from the lunch we had prepared for our friends yesterday.

So I just pulled out a few things and set this vibrant, tasty, vitamin and protein packed bowl in 5 min !

In this one: raw kale and yellow zucchini, raw middle eastern cauliflower rice salad, yellow capsicum houmous, grilled corn and a good olive oil and lemon dressing.

Trust me, batch cooking and zero waste food strategy is a real time saver and a game changer to have everyday something new and delicious on your table !

I have been seing so many beautiful strawberry pictures on Instagram lately, that I am definitely craving for some today !! Starting with breakfast πŸ™‚

So I decided to pimp my breakfast with a strawberry chia porridge.

So pretty, flavorful and indulgent, yet healthy… you feel you could eat it every single day !

Lemon curd vegan tart to die for

When your buddy has a sweet tooth and used to eat homemade real buttery and sugary lemon curd straight from the jar every week-end at his mum’s place πŸ™‚ ….. you have to find the perfect healthy lemon curd recipe to get him addicted to yours πŸ™‚

I have tried many variations, but I think this one is among the best, especially to be used in a pie.
