Mango Smoothie Bowl

I could live only eating fruits and veggies (don’t do it though it’s not balanced ๐Ÿ™‚ ! And we are spoilt here, especially when it is the mango season ! My kids love fruits too, but sometimes find it a bit boring when I tell them their afternoon snack will always feature a fruit. Smoothies are a great way to shake it up and make it much more fun for them to have their dose of real natural sugar, vitamins and fibers ! And yes smoothies are much better in my opinion than juices. I have a cold pressed juicer at home and do use it, especially to make veggies juices. But compared to a smoothie you lose all fibers when you juice. And for that reason too, smoothies are much more filling and Leo will always be satisfied with a smoothie whereas he ll ask for more after a big cold pressed juice ๐Ÿ™‚

Adjust the recipe below to get the consistency you like and either drink or eat it. In case you make a smoothie bowl, top with goji berries, extra banana or mango slices, hemp seeds, pomegranate, raw cacao nibs, quinoa flakes or coconut flakes.

Ingredients (Serves 2)

  • 1 +1/4 cup frozen mangoes
  • 1 cup frozen bananas
  • 1/2 cup almond milk
  • 1/2 cup coconut milk
  • 5/6 ice cubes (adjust to consistency you like)
  • Optional 1/4 tsp real vanilla extract

Instruction

Put everything in your high speed blender, blend until smooth.

Spinach, kiwi, avocado smoothie

I remember I didn’t like so much green soups when I was a kid ๐Ÿ™‚

Well now, I love them and even make raw green veggies juices and smoothies all the time ! Thank god, we change ๐Ÿ™‚

The smoothie recipe I share below is very creamy as it features avocado. It is also super nourishing so I will have it as a meal or after a strong workout session.

It is really a supergreen and superfood smoothie:

avo is loaded in good fat, fibers, vitamin B and C and minerals, spinach is rich in calcium, fibers, vitamins and kiwi is your vitamin booster. Adding protein powder (optional) enriches it with proteins and maca makes it a super energy booster !

Sip it or eat it in a bowl topped with fresh fruits and seeds.

INGREDIENTS (serves 2)

  • 1,5 cups fresh spinach leaves (washed, ideally organic)
  • 2 kiwis, peeled and sliced
  • 0,5 cup diced cucumber
  • 1 medium diced ripe avocado
  • 1/2 to 1 cup unsweetened almond milk (or other nut milk)
  • 1cup ice
  • 1 to 2 tbsp lime
  • 2 tbsp vegan protein powder (optional)
  • 1 to 2 tsp maca powder (brings a nutty flavor)
  • 1 to 2 tbsp maple syrup (if you have a sweet tooth. I did not put any as I added toppings which were sweet enough)

DIRECTIONS

  1. Put all ingredients except the nut milk in your high speed blender (I use my thermomix). Pulse at high speed and add gradually the nut milk until you get the consistency you like
  2. Taste, add more sweetener or lime according to your tastebud.
  3. Drink it or pour it in a pretty bowl topped with your favorite toppings (I used passion fruit, melon and pumkin seeds, tahini and some lime juice)

Chai smoothie

A little sick this morning, I felt I needed a cosy smoothie to get me through the day.

Opted for this vegan chai spiced version, I had tried and loved in Australia a few months ago.

It is super balanced, blending fruits and veggies :), proteins and good fats. And the spices will bring a nice flavor and are said to have great anti inflammatory qualities !

I guess it could become a regular, as it turned out so good !!

INGREDIENTS

  • ย 1 frozen ripe banana cut in chunks
  • 2/3 cup peeled cucumber
  • 1/3 cup almond milk (unsweetened, better if home made ๐Ÿ™‚ you can switch for other plant based or even regular milk if you are not vegan)
  • 1 tbsp almond butter (or hazelnut or PB)
  • 1 tbsp flaxseed flour
  • 1 tbsp vegan protein
  • 1 tsp vanilla
  • 1/2 to 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 to 1/4 clove (according to your taste)
  • 1/4 tsp cardamon

Put everything in your high speed blender, adding the milk gradually up to the consistency you like.

Drink it or have a smoothie bowl, adding some crunchy bites like raw cacao nibs, dried mulberries, dried apples or figs, ..

Pea and mint Houmous

Definitely in a super Green Mood today ๐Ÿ™‚

But as my fridge is almost empty and I am a bit lazy to go out and pick up some fresh veggies…

I went for a green pea houmous ๐Ÿ™‚

5 min to put together the ingredients and super simple as you just need a high speed blender after that !

Love sweet peas and mint combo. Eaten as a dip on pita bread or in a wrap it is delicious.

I also had it with vegan lentil patties and it was supper yummy.

See for yourself =)

  • 3 cupsย of frozen peas, thawed (if you use fresh them cook them but keep them firm)ย 
  • 1 to 2 cloves of blanched garlic according to taste
  • 3 to 4 tablespoonsย lemon juice (I prefer it a bit more tangy:)ย 
  • 1/2 cup mint leaves
  • 3 tablespoonsย extra virginย olive oil
  • 1/4 to 1/2 teaspoon of cayenne pepper (you can omit it if you don’t like it spicy)
  • 1/2 teaspoon of ground sea salt

Place peas, mint, olive oil, garlic, and lemon juice in your high speed blender and puree it until you get a smooth texture.

Transfer it to your serving bowl and ย drizzle with additional extra-virgin olive oil, seeds (pumpkin, or black sesame), cracked pepper, a few peas and mint leaves.

Nb: if you are not vegan, it is very good with crumbled feta cheese on top !

Beetroot and Lemongrass detox Juice

Most of the time I will eat my fruits and veggies or blend them in smoothies to keep the goodness of fibers.

But once in a while I go for a homemade cold pressed juice, especially for a good detox juice.

My friend Franziska had told me about this fantastic combo when we were walking in Singapore Botanic Garden and I was craving for it since then ๐Ÿ™‚

Don’t be afraid by the beetroot which has a strong earthy flavor. In this blend it is tamed by the apple and twisted with the lemongrass.

So refreshing and subtly flavored.ย And look at this color !

Trust me if you try it, you could get addicted ๐Ÿ™‚

The recipe is as simple as:

  • 1 small raw peeled beetroot
  • 1 medium red apple (keep the skin if organic otherwise peel it)
  • 3 tbsp lemon juice
  • 1 to 2 2 cm ginger bits (I love ginger but maybe try with only a small amount first)
  • 1 to 2 lemongrass sticks (again I put 2 but start with one), use the internal par of the stick that is tender.

Put everything in your cold press juicer, ensuring you put the ginger and lemongrass between the fruits to maximize their juice extraction.

Enjoy (you can try and add more spices / lemon according to taste)

Dried apples, cocoa nibs chia pudding

I always have some chia porridge in the fridge, I can combine with my craving of the day ๐Ÿ™‚
This morning I took out my apples from the dehydrator and thought it would be the perfect combo to start my day happily and healthily ! “An apple a day… ” as my mum used to tell me ๐Ÿ™‚

Bliss balls fever

I don’t know if you snack, but I do ๐Ÿ™‚

I am like the kids, I guess, I still need my 4 o clock little treat to fuel me until diner time.

Usually it will be a fruit, or a juice, and maybe a few activated raw nuts.

But if I really need energy I will go for bliss balls.

Today I could not make up my mind, so I made 3 different varieties:

Apricot and tahini, Fig and hazelnuts, Date and cacao
