Red fruit vegan bircher muesli

Today I have finally decided to update my blog 🙂

Don’t know why, but I am definitely not a blog person 🙂

I love cooking and sharing recipes, bit I wish the whole blog filling could be done automatically ! At some point I feel it is really too much time behind screens and I’d rather spend it developing new recipes 🙂

On the other hand, some of my followers have given me such great feedbacks recently after they had tried some of my recipes, that I am really happy to share those with you !

Today I had planed to eat bircher muesli for breakfast. Which evolved in a bircher muesli base topped with red fruit compote and fresh berries.

After all you can dress up your bircher the way you want, providing the porridge base is yummy.

And trust me this one is super delicious, super easy, can be prepared the night before and is super well nutritionally balanced.

INGREDIENTS 

  • 1/3 cup old GF rolled oats
  • 1/3 cup almond or oat milk
  • 2 tbsp apple sauce (preferably homemade and sugar free:)
  • half green apple, peeled and grated (ideally organic)
  • 1 tbsp PB or almond butter (or sunset butter if you are allergic to nuts)
  • 1 tsp raisins
  • ¼ teaspoon ground cinnamon

DIRECTIONS

  1. The night before, combine oats, apple sauce and nut butter. Stir well and add the plant based milk. Stir well again and add the cinnamon, raisins and grated apple.
  2. Put in the fridge (I will always prepare in a glass container with a lid, such as weck jars)
  3. In the morning, take it out, add a little plant milk or yogurt, top with raw apples slices and some nuts and seeds for the traditional version. Or any other fruits and toppings you fancy on that day 🙂

Nb: you can prepare this up to 2 days ahead.

Vegan gluten free cinnamon apple tart

I was raised with apple tarts !

My parents had a huge garden with many apple trees and in autumn we would go and pick up all the apples from the trees we would stock up and eat throughout the year 🙂

I miss those 100 % organic and so flavorful apples. Today apples are such a controversial fruit. “An apple a day should keep the doctor away”, right ? but when you learn that apples rank as the 4th worst fruit to eat given all the chemicals they are sprayed with, to grow and last longer… I am always careful when I buy and use some, and probably eat much less apples then I used too …

But today we were in the mood for apple tart. It is freezing (Singapore style, ie 22/24 degrees 🙂 ) and so grey that comforting treats have to be on the menu !

This tart is quite healthy as the crust is GF and vegan, and the apples are just lightly brushed with lemon and maple syrup.

Recipe just below so you can also spoil yourself with this delight.

INGREDIENTS

CRUST:

  • 90 grs GF oat flour
  • 130 grs almond flour
  • ¼ tsp sea salt
  • 3 tbsp maple syrup
  • 1/4 cup coconut oil

FILLING:

  • 4 to 5 apples (I used pink ladies).
  • 3 tbsp lemon juice
  • 2 tbsp maple syrup
  • a handfull raisins
  • cinnamon

DIRECTIONS 

CRUST

  1. Preheat the oven to 170 °C fan forced
  2. Combine the almond flour, oat flour, salt in a bowl. Drizzle in the coconut oil and maple syrup and stir until you get a dough consistency.
  3. Spread the dough using your fingers in a pie pan, lined with baking paper or on a baking tray lined with paper. (You can roll it toping it with a second sheet of baking paper to avoid it sticks to the pastry roll).
  4. Make holes using a fork to avoid getting bubbles and put the dough to bake for 10 min (corners should start getting a little brown)

FILLING

  1. Peel and cut the apples. Marinate them in the lemon juice and maple syrup combo.
  2. Spread them on the dough, dust with a little cinnamon, sprinkle some raisins and bake for 25 min. Brush them with more maple and lemon mix and bake again for 15 min
  3. Take it out, add a little more cinnamon (if you are a cinnamon lover like me 🙂 and eat warm with a scoop of plant based yogurt or cream, or on its own 🙂

What about kale for breakfast ?

Superfood for breakfast today !

Again I vote for green as it definitely wakes me up 🙂

I have had many kale smoothie or smoothie bowls so far, but never combined it with apple strangely enough.

It brings a subtle sweet note, a  nice acidity and lots of fibers !

Such a fresh and balanced combo. And definitely a superfood bowl: kale, apple, chia, almonds, goji berries ! wholesome nature goodness in one bowl 🙂

And once again, you really don’t feel like you are eating kale (I love it but wouldn’t fancy its taste at 7.00 am though :).

I let you make your mind if you try the recipe just below and share your comments by mail or on Insta.

Recipe:

  • 1 cup kale (stems removed, ideally organic)
  • 1 small green apple cut in quarters (organic or remove the skin)
  • 2 tbsp vegan protein powder
  • 1 tbsp almond butter (or PB but stronger taste)
  • 1 tsp chia seeds
  • 1/3 to 2/3 cup almond milk (depending on the texture you like)
  • 1/2 tsp vanilla extract
  • Optional: 1 date (I did not put any, as the sweetness of goji bites in the bowl was enough for me, but if you like it rather sweet, add 1 to 2 dates)

Put all the ingredients in your high speed blender, ensuring you add the milk gradually, and pulse until you get a smooth creamy texture.

If you want it iced, place your almond milk in iced cubes trays the day before and add these almond milk ice cubes instead of liquid milk.

If you want to eat it in a bowl, top with goji berries, chia seeds, melon seeds (or pumpkin seeds) and strawberries (fresh or dehydrated).

Apple crumble smoothie bowl

I am definitely European 🙂

Felling like autumn is on the way, despite the climate in Singapore, I start to crave for apples, pumpkin, and gingerbread 🙂

Especially when I read all the insta posts featuring amazing autumnal recipes !

So I decided to wipe out bananas from my smoothie bowls for some time and use apples instead !

In this super easy recipe you get a silky smoothie, spiced with cinnamon and cardamon. If you add some crunchy bites you could feel you are eating an apple pie / crumble.

Light yet, nourishing, GF, super healthy, super yummy ! Go for it and let me know 🙂

Recipe:

  • 1 medium red apple (remove the skin if not organic)
  • 1/4 GF oats
  • 1/2 to 1 cup almond (or oat) milk
  • 1 or 2 dates (according to your sweet taste)
  • 1 tbsp vegan protein powder (optional)
  • 1 tbsp almond butter (or PB but stronger taste)
  • 1 tsp vanilla extract
  • 1/2 to 1 tsp cinnamon (according to taste)
  • 1/4 tsp cardamon

Ideally soak the dates and oats for 15 min in the almond milk, then blend all the ingredients in your high speed blender until you get a smooth texture. Add more almond milk if you want to drink it.

If you want to have a bowl, top with fresh apple slices, dried mulberries, chia seeds and puff millet (or homemade granola, walnuts, …)

Dried apples, cocoa nibs chia pudding

I always have some chia porridge in the fridge, I can combine with my craving of the day 🙂
This morning I took out my apples from the dehydrator and thought it would be the perfect combo to start my day happily and healthily ! “An apple a day… ” as my mum used to tell me 🙂
