Aquafaba nuts meringue

It took me a while before trying aquafaba to make meringues. I think I found it really weird to use the chickpea water and was afraid of the taste it would have. Weird though, as raw white eggs are not better, right ?

But I finally did it and must say it is very satisfactory πŸ™‚

It works so well, much better than egg whites actually ! And the texture and taste is really similar to egg meringues.

So next time you cook chickpeas, keep your draining water and give it a try.

Mouthwatering Shortbreads !

The Holidays have officially started ! And Rose and Leopold are so excited to go back to France !!! I had to figure out something to do this morning to use all their energy and turn it into a fun family activity… So we baked shortbreads. The real British ones, so buttery, they crumble between your fingers.

I have tried some plant based alternatives a few times, but not so satisfying. So I stick to the original recipe, whichΒ I don’t do so often as we are more on balanced healthy cooking usually πŸ™‚

But they love them so much, that once in a while it is pure pleasure to see them eat them until the last crumb !

We don’t have seasons in Singapore, but I can feel it is summer ! My mums keeps on sending beautiful pictures of her garden flowers and veggies, and Instagram is packed with incredible summer fruit pictures !

So today, I want to bake a really summery dessert: a clafoutis. If you have never tried it, imagine a baked custard texture with soft center and crispy caramelized top. You can use any fruits, but usually people will bake cherry clafoutis. I love it !! However today I opted for apricots as I managed to find some cute ones in the store next to my place πŸ™‚

Trust me it is really delightful, and this vegan option is much lighter than the regular ones.

Lemon curd vegan tart to die for

When your buddy has a sweet tooth and used to eat homemade real buttery and sugary lemon curd straight from the jar every week-end at his mum’s place πŸ™‚ ….. you have to find the perfect healthy lemon curd recipe to get him addicted to yours πŸ™‚

Do you crave for chocolate sometimes ?
Me, I do, but for the real dark chocolate indulgence !
Brownies are my go to treat on a rainy day or when I want to indulge myself. But I can never eat brownies I haven’t baked πŸ™‚
First, never vegan, often far too sweet, and almost always loaded with saturated fat…
So I had to find the proper brownie recipe to make my own.
After a few trial I came up with this one, which is also gluten free πŸ™‚ and definitely super super yummy.
Easy as it requires only 6 ingredients and is impossible to fail.

Matcha bliss balls

Bliss balls are my “go to” healthy treat when I want to have a shot of energy before sports or if I had a super light meal and need a boost.

But today I made them to have some healthy snacks in my pockets while attending the kids school fair.

This time I chose the almond hazelnut matcha recipe, to get the extra kick from matcha powder.. and also because I love this recipe !
It was definitely a good idea.. and Rose and Leopold actually ate most of it πŸ™‚

I am like the kids, I guess, I still need my 4 o clock little treat to fuel me until diner time.

Usually it will be a fruit, or a juice, and maybe a few activated raw nuts.

But if I really need energy I will go for bliss balls.

Today I could not make up my mind, so I made 3 different varieties:

Apricot and tahini, Fig and hazelnuts, Date and cacao
