Tahini GF blondies

Do you like fudgy textures ? Do you like brownies but find them sometimes a bit too chocolaty ?

I have the recipe you need !

No refined sugar, GF, vegetarian but with a vegan variation as an option: they are a treat and not so bad for you.. if you can resist eating the whole pan  🙂

Ingredients:

Wet ingredients:

  • 3/4 cup coconut sugar
  • 2 large eggs or 2 flaxseed eggs (6 tbsp cold water mixed with 2 tbsp flaxseed meal)
  • 1/2 cup tahini
  • 1/3 cup melted coconut oil
  • 2 tsp vanilla extract

Dry Ingredients:

  • 1,5 cup almond flour
  • 0,5 cup coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dark chocolate chips (use vegan ones if you go for vegan recipe)

Directions

  1. Preheat the oven to 170°C degrees fan forced.
  2. In a large bowl, mix together the wet ingredients  until smooth.
  3. Do the same with the dry ingredients (except the chocolate chips)
  4. Add the dry mix to the wet mix and stir well, then add the chocolate chips. You should get a dough very dense and sticky, same as a cookie dough.
  5. Line a baking pan (20×20 cm) with parchment paper
  6. Add the batter to the pan and spread evenly. Bake for 16/20 min until edges are slightly golden. (ensure you keep it goes so it should be slightly underbred)
  7. Take it out from the oven and sprinkle with sea flakes if you want to add a little twist. Wait for it to cool down a little then remove from the pan, cut in square bits and enjoy !

Tahini GF blondies

Back from amazing China… I haven’t been cooking a single dish for the past 2 weeks… seems weird to be back in my kitchen and in charge of the family food again !

We have experienced so much variety with food in China .. I did not expect we would enjoy our meals so much I must confess ! Of course we stayed on a vegetarian diet and ate mostly veggies, noodles and rice… But as Chinese share their meals, we always ended having 5 /7 different veggie dishes on our table with steamed, stir fried, roasted, … variations and so many different green leaves, mushrooms and cabbages options, … A real discovery indeed !

However, kids have been craving for some cakes, as they did not eat much of those during that trip for sure 🙂

So I promised my first baking would be those tahini GF blondies I had in mind for a long time.
