Tropical Granola

Yesterday I realized I hadn’t baked granola for such a long time !

As I had just dehydrated some pineapple and mangoes I thought I’d change and make a sunny roasted granola using those beauties and lots of seeds !

Granola is so easy. Once you have the basic recipe you can make any kind of variation. And it is so much healthier as you know what you have put inside and in this case, use almost no additional sweetener and only 2 tbsp coconut oil !

This granola ended up being super crusty and full of exotic vibes.

Try it for yourself and enjoy it as a snack or with your yogurt / fruits 🙂

THIS RECIPE IS

INGREDIENTS

  • 1,5 cup gf rolled oats
  • 2/3 cup cashew nuts (ideally activated)
  • 1/2 cup pepitas
  • 1/2 cup sunflower kernels
  • 1/2 cup shredded coconut
  • 1/2 cup coconut flakes
  • 2 to 3 tbsp maple syrup (according to your sweet note 🙂
  • 2 tbsp melted coconut oil
  • 1/3 cup dried mangoes (ideally without added sugar)
  • 1/3 cup dried pineapple
  • 1/2 tsp vanilla extract
  • 1/3 tsp sea salt

DIRECTIONS

  1. Preheat the oven at 135°C fan forced
  2. Mix all dry ingredients (except the fruits) together
  3. Mix all wet ingredients together and add them to the dry ones. Mix well until everything is well coated
  4. Spread your raw granola on a baking tray covered with baking paper and leave for 12 min in the oven. Stir with a wooden spoon and leave it for another 20 min.
  5. Add the dried fruits, stir and let it for 5 last min in the oven. You should get a nice coloration of the oats, coconut flakes and seeds (see picture). If not, leave for an extra 2/3 min or increase by 5deg C your oven.
  6. Let it cool down and once totally cold, store in airtight container. You can also keep it in the freezer if you made a big batch and want to keep it longer.
  7. Good on its own, but also superb on smoothie or açaí bowls or with plant yogurt and passion fruit.

Nb: it is important to ensure your granola layer is not too thick when roasting in the oven, so it can cook evenly. If it is the case split it in 2 trays.
