Pearl couscous, oranges, mint and feta salad

Looking for a great salad full of summer vibes to assemble in 5 minutes ? This recipe is for you !
You just need 6 ingredients, no cooking skills. Easy 🙂 I chose to make it with pearl couscous I recently discovered. Much bigger than traditional couscous grains, it brings a nice texture to this salad, but you could use regular couscous if you don’t find pearl one.

INGREDIENTS
Salad:

  • 2 cups cooked pearl couscous (preferably wholegrain)
  • 1 cup shredded baby spinach
  • 1 cup shredded fresh mint leaves
  • 1 cup peeled and finely cut oranges
  • 1/2 cup crumbled feta

Dressing:

  • 3 tbsp olive oil
  • 2 tbsp orange juice
  • 1/2 tsp sea salt

INSTRUCTIONS
Mix all ingredients in a large salad bowl.
Prepare the dressing and pour it just before serving.
Top with fresh mint leaves , pepitas and cracked pepper.

TIPS
Replace feta with marinated tofu for a vegan version.
To gain time, cook pearl couscous ahead of time in large quantity. You can use the rest for a risotto, a tabouleh salad, as a side for a curry, …
