This recipe is for you if you love pesto, and are looking for healthier alternative than the parmesan cheese based one.
Still a burst of flavors, super green, really yummy and cheesy with the use of nutritional yeast !!

Ingredients
- 3 cups chopped parsley leaves
- 2 cups chopped basil leaves
- 1 cup walnuts (better if you have soaked them for 1 to 2 hours in hot water, then drained them)
- 1/2 cup nutritional yeast
- 3 tbsp olive oil
- 1 Tbsp crushed garlic OR 1 tsp garlic powder
- 3 to 4 Tbsp lemon juice
- Optional cracked pepper to taste
Directions
- Process walnuts and parsley in food processor until fine
- If using fresh garlic, leave it in the lemon juice for 30 min before using to mellow the flavor
- Add oil & garlic, nutritional yeast, lemon juice to the food processor and process until smooth
- Add salt & pepper to taste
- Store in the fridge, covered with a tight fitting lid, for up to a week (it can also be frozen for a few months, I often freeze small portions using ice cubes trays)
