Vegan walnut pesto recipe

This recipe is for you if you love pesto, and are looking for healthier alternative than the parmesan cheese based one.

Still a burst of flavors, super green, really yummy and cheesy with the use of nutritional yeast !!

Ingredients 

  • 3 cups chopped parsley leaves
  • 2 cups chopped basil leaves
  • 1 cup walnuts (better if you have soaked them for 1 to 2 hours in hot water, then drained them)
  • 1/2 cup nutritional yeast
  • 3 tbsp  olive oil
  • 1 Tbsp crushed garlic OR 1 tsp garlic powder
  • 3 to 4 Tbsp lemon juice 
  • Optional cracked pepper to taste

Directions

  1. Process walnuts and parsley in food processor until fine
  2. If using fresh garlic, leave it in the lemon juice for 30 min  before using to mellow the flavor
  3. Add oil & garlic, nutritional yeast, lemon juice to the food processor and process until smooth
  4. Add salt & pepper to taste
  5. Store in the fridge, covered with a tight fitting lid, for up to a week (it can also be frozen for a few months, I often freeze small portions using ice cubes trays)
