Vegan Blueberry cookies

 

Those cookies are a nice treat, 100 vegan, GF and refined sugar free.

Also, so easy to bake. As always, I don’t post difficult recipes, but easy ones you can follow step by step and adapt the way you want. For those ones, you can replace the dried blueberries by raisins, cranberries, dried apricots or even chocolate chips 🙂

Also you can switch almond flour with hazelnut flour which would definitely work well with chocolate chips 🙂

Ingredients 

Makes approx 15 cookies

  • 1 cup almond flour
  • 3/4 cup coconut flour
  • 1,25 cup GF oat flour
  • 2 tbsp coconut oil
  • 2/3 cup almond milk
  • 1 tbsp almond butter
  • 1/4 cup coconut sugar (maybe a little less as I found them a little sweet for this first trial)
  • 1 to 2 tbsp maple syrup (again maybe only one or reduce a little the coconut sugar)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 cup dried blueberries
  • 1 pinch sea salt

Directions

  1. Preheat the oven, fan forced at 170° C
  2. Mix all dry ingredients together except the blueberries
  3. Mix all wet ingredients together
  4. Combine wet and dry and stir well. Finally add the blueberries, mixing carefully (not to stain to much the dough with purple colour 🙂
  5. Make cookies using a tbsp as measuring scoop. Put on baking paper on a tray and cook in the oven for 20 to 25 min (it should get a nice coloring but ensure not too much brown)
  6. Keep in airtight container / metallic box once totally cooled down.
