Spiced pear with salty nut crumble loaf

This cake is very visual and super tempting !! and when you try it, you are not deceived, trust me !

The GF dough is super moist as it is mostly made of almonds, with very little flour. Then you get the pear texture, a little firmer as they have been poached in a spices and honey sirup and you finish with the crusty salty walnut crumb that twist the whole slice.

It is still very easy to make and the pictures below are my first try. I was scared that the dough would not have the proper consistency / the pears would make it to wet, but it worked perfectly well.

THIS RECIPE IS:

INGREDIENTS

To poach the pears:

  • 4 pears
  • 1 cinnamon stick /4 star anises /8 crushed cardamom pods
  • 3 tbsp honey

Cake dough:

  • 150 grs almond flour
  • 50g GF oat flour
  • 120 grs coconut sugar
  • 3 eggs
  • 120 grs butter or olive oil
  • 1,5 tsp ground cinnamon
  • 1 tsp ground ginger
  • ¼ tsp of ground nutmeg
  • pinch of sea salt

Walnut crumble:

  • 125 grs walnuts
  • 20 grs butter or coconut butter
  • 20 grs coconut sugar
  • a pinch of sea salt
Poaching spiced pears

DIRECTIONS

  1. Poach the pears: add the whole pears peeled to a pan with the cinnamon, star anise, cardamom pods and honey. Top with water, bring to a boil and cook for at least 20 min (should be cooked through when you use a knife)
  2. Mix the flours, salt and spices together in a bowl
  3. Mix the sugar with the eggs and beat well to get a creamy texture.
  4. Add gradually the melted butter or the oil to the flours mix, and finish with the eggs mixture.
  5. Set the oven, fan forced at 180°C
  6. Prepare the walnut crumble, mixing with your hand the roughly chopped walnuts with the butter, sugar and salt.
  7. Transfer the dough in a non sticky tin loaf (or use parchment paper) and add the pears 1 by one.
  8. Top with the crumble and put it in the oven for Roughly 40/45 min
  9. Wait until it has cool down to transfer and cut in slices. Use a bread knife to cut it more easily

Nb: if you don’t have walnuts you can use hazelnuts or pecan nuts that pair well with pears
