Red rice, quinoa, spinach GF patties

Just follow the very simple recipe below and feel free to increase quantities (you can freeze cooked patties for 1/2 months) or spice them up a little using chilly flakes / garam masala powder if you don’t mean to share with your kids.

 

Ingredients for 12 patties

  • 1 cup cooked quinoa.
  • 1 cup cooked red rice
  • 3 cups chopped spinach
  • 1/2 cup herbs finely chopped (used parsley and coriander)
  • 1/3 cup buckwheat flour
  • 1/2 cup red onion finely chopped
  • 3 eggs or flaxseed eggs for vegan option
  • 2 cloves minced garlic
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin cold pressed olive oil
  • 1/2 tsp mustard
  • 1/2 tsp maple syrup
  • 1/2 tsp garlic powder
  • good pinch of salt and some pepper

Directions

  1. Mix all the ingredients in a large bowl. Let the mixture sit for 10/15 min to ensure everything is blended before cooking.
  2. Heat up a pan over medium heat and put a tsp of olive oil, or preheat the oven at 160°C and lay baking paper on a baking tray
  3. Shape patties the size you want (mine were 8 cm wide, 1.5 cm high) and cook them in the pan or in the oven. Flip after 3/4 min and cook again, you should get a nice golden exterior on both sides at the end. Patties should be soft but firm.
  4. Eat warm with the dip / sauce of your choice or keep in the fridge for 2/3 days (or freeze).
