This recipe is

Ingredients
- 2 cups spelt flour
- 1,5 cup mashed ripe banana
- 2/3 cup finely shredded carrot
- 1/2 cup shredded coconut
- 1/3 cup walnuts cut in chunks
- 1/2 cup almond milk
- 1/3 to 1/2 cup maple syrup (according to your sweet tooth:)
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp vanilla extract
Directions
- Preheat the oven fan forced to 180 °C.
- Combine all dry ingredients in a bowl.
- Blend all wet ingredients in another bowl.
- Mix wet with dry, and stir to form a batter.
- Pour in your tin loaf pan lined with baking paper or lightly greased
- Put in the oven for 35 min. Then stop the oven and let it for 12 more min. Check it is baked properly with a knife and if not, put back in the oven, for 5 more min (oven turned on again)
- Let cool totally before covering and storing in the fridge.
- Enjoy the day after (can keep for a few days in the fridge or slice it and freeze it).
