Healthy banana carrot cake

This recipe is

  • Oil Free
  • GF, and low fat
  • Really delicious !

Ingredients

  • 2 cups spelt flour
  • 1,5 cup mashed ripe banana
  • 2/3 cup finely shredded carrot
  • 1/2 cup shredded coconut
  • 1/3 cup walnuts cut in chunks
  • 1/2 cup almond milk
  • 1/3 to 1/2 cup maple syrup (according to your sweet tooth:)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract

Directions

  1. Preheat the oven fan forced to 180 °C.
  2. Combine all dry ingredients in a bowl.
  3. Blend all wet ingredients in another bowl.
  4. Mix wet with dry, and stir to form a batter.
  5. Pour in your tin loaf pan lined with baking paper or lightly greased
  6. Put in the oven for 35 min. Then stop the oven and let it for 12 more min. Check it is baked properly with a knife and if not, put back in the oven, for 5 more min (oven turned on again)
  7. Let cool totally before covering and storing in the fridge.
  8. Enjoy the day after (can keep for a few days in the fridge or slice it and freeze it).
