Caco fig nutty granola

If you like figs, cacao and nuts, this recipe is for you !

It is not sweet on purpose, as the dried fig bites will provide some sweetness now and then when you eat a big cluster 🙂 But you can always add some honey (non vegan) or maple syrup / agave syrup to the wet ingredients if you fancy sweet granolas.

THIS RECIPE IS

  • as any granola super easy to make 🙂

INGREDIENTS

  • 1 cup chopped almonds
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut flakes
  • 2 tbsp raw cacao powder
  • 1/3 cup raw cacao nibs
  • 5 dried figs
  • 1 tbsp almond butter (or PB)
  • 1 tbsp coconut oil
  • 1/4 cup flax seeds rehydrated in 1/4 cup water
  • 1 tsp vanilla
  • Optional: 3 to 4 tbsp honey or agave syrup for sweetened version

DIRECTIONS 

  1. Pre-heat the oven to 140°C
  2. Combine all dry ingredients except the figs in a bowl together.
  3. Combine the rehydrated flax seeds (that should look gummy) to the other wet ingredients and stir well.
  4. Add the wet mixture to the dry ingredients and mix well with a wooden spoon, or better with your hands 🙂
  5. Spread the granola on a  baking sheet lined with parchment paper. Bake for 20 minutes, stir carefully, ensuring you keep big clusters, and let it bake again for 10/15 min. 5 min before stopping, add the chopped figs.
  6. Take the granola out of the oven and let it cool completely before transferring in a glass jar.
  7. You can keep it for up to a month and even store it in your freezer if you have to much (not sure this is will ever be an option at our place though 🙂
